Yerba mate is a fruit that grows in South America. The tea leaves are harvested from the dried leaves and twigs of yerba mate (Ilex Paraguariensis), which grows in rainforests.
The tea leaves are harvested from tea bushes.
Yerba mate has been used as a beverage since the time of the ancient Brazilian and Paraguayan Indians and is considered the national drink of several South American countries. Today, mate has spread to many parts of the world, offering a good alternative to regular coffee and tea.
Unlike the energy from coffee, which burns off in a couple of hours, the energy from yerba mate lasts evenly throughout the day. Yerba mate tea gives you a smooth energy boost and a bright feeling similar to coffee, but it rarely disturbs your sleep or makes you jittery.
Add 1–3 teaspoons (depending on the desired strength) to a pot of tea.
Pour cold water over the top to cover the pulp (helps retain nutrients and softens the taste).
Then pour on 70–80 degree water (too much heat will destroy the nutrients).
Allow to infuse for 3–5 minutes and enjoy.
You can make a drink 2–3 times from one mate puree. Pour on more water, infuse again and you’re done.
White mate for about 5 minutes.
